Mango Macarons Recipe from ‘Good Clean Food,’ Spring 2017 by Lily Kunin
· 1⁄2 cup (60 g) raw cashews
· 1⁄2 cup (45 g) coconut flakes, plus 2 tablespoons for rolling
· 1⁄2 cup (50 g) chopped dried mango
· 1 teaspoon maple syrup
· 1⁄2 teaspoon pure vanilla extract
· Pinch of sea salt or pink salt
· Splash of plant-based milk, as needed
In a food processor, combine the cashews and coconut flakes and process until you have a crumbly mixture. Add the mango, maple syrup, vanilla, and salt, and pulse until well combined. The mixture should stick together when pinched. Add a splash of plant-based milk if needed.
Roll the mixture into balls using a small cookie scoop (or about 2 teaspoons of dough), and roll in the coconut flakes. Place the balls on a parchment-lined plate and chill them for 30 minutes before serving.
